I knew you were coming, so I baked a Gluten Free Chocolate Cake. Happy Birthday, Mommy! When I knew you were flying in from Seattle to LAX, I wanted to celebrate you as I always do. Even though your birthday was a few days past on the 8th, I made a cake designed it in her honor and style. Her favorite color is blue, favorite flowers being a daisy and her style is that of a hippie. And chocolate, how does anyone not like chocolate?
I asked her initially what kind of cake she wanted, she wasn’t sure until I suggested a flour less chocolate cake and then she was like “YES! That’s the one!”. Normally, I’d opt for a Vegan version but she is no vegan. However, this recipe IS Gluten Free! She didn’t celebrate with dessert in Seattle because she wanted her birthday cake to be made by me, I’m so happy that she would feel that way. She was certainly surprised when I popped in with this! A Flourless Chocolate cake, engulfed in a beautiful and rich coating of ganache. Decorated with edible sugar wafer daisies and a beautiful layer of sugar lace details. What a fun gift to someone!
Devils in the details? Oh, but this could rival in Devilsfood! It’s darkness is all encompassing and sultry~!
And oh, how the flowers melt in your mouth with there subtle flavor, almost effervescent as it dissipates in your mouth. Truly satisfying knowing that you sat down and ate the whole thing, there would be no evidence of the guilt since the entire lovely thing is edible. Only chocolate will be left on your fingers… or fork. But we all know how dipping our fingers in chocolate is ultimately a satisfactory experience.
And outside, it is spring blossoming in our hearts. And also, on the trees. It is wonderful to celebrate you, your life and all of the love we give one another. Happy Birthday, my beautiful.
